To make the Beetroot Hummus, start by peeling and chopping one large beetroot. Place the beetroot in a pot of boiling water and cook for 20 minutes or until tender. Once the beetroot is cooked, drain the water and mash the beetroot with a fork. Combine the mashed beetroot with two tablespoons of olive oil, two tablespoons of tahini, the juice of half a lemon, two cloves of garlic, a teaspoon of ground cumin, and a pinch of salt and pepper. Blend the ingredients together until you have a smooth paste.

To serve the Beetroot Hummus with bread, toast slices of your favourite bread until they are golden brown. Spread the Beetroot Hummus generously onto each slice of toast. Optionally, you can sprinkle some chopped fresh herbs or toasted sesame seeds onto the hummus for extra flavour.

Bread with Beetroot Hummus is a simple and nutritious snack or light meal. The sweet and earthy flavour of the Beetroot Hummus pairs beautifully with the toasted bread, and is sure to be a family favourite. For added protein, try adding some cooked chickpeas or feta cheese to the hummus. Enjoy!
