  •  2 cups grated zucchini
  •  ½ cup all-purpose flour
  •  1 teaspoon baking powder
  •  1 teaspoon garlic powder
  •  1 teaspoon onion powder
  •  1 teaspoon Italian seasoning
  •  Salt and pepper to taste
  •  2 eggs
  •  ½ cup grated Parmesan cheese
  •  2 tablespoons olive oil


1. In a large bowl, combine the grated zucchini, flour, baking powder, garlic powder, onion powder, Italian seasoning, salt, and pepper. Mix until combined.

2. In a separate bowl, whisk together the eggs and Parmesan cheese.

3. Add the egg mixture to the zucchini mixture and stir until combined.

4. Heat the olive oil in a large skillet over medium heat.

5. Using a spoon, drop heaping spoonfuls of the zucchini mixture into the skillet and flatten with a spatula. Cook until golden brown, about 3 minutes per side.
