Ingredients

  • 1 Butternut Squash, cut into cubes
  • 2 cloves of garlic, diced
  • 1 tablespoon of olive oil
  • 1/2 teaspoon of dried rosemary
  • Salt and pepper, to taste
  • 2 cups of cooked pasta
  • 1/4 cup of grated Parmesan cheese

Instructions

1. Preheat oven to 375 degrees F.

2. Toss the butternut squash cubes with the garlic, olive oil, rosemary, salt, and pepper.

3. Spread the squash onto a baking sheet and roast in preheated oven for 25 minutes, or until the squash is tender.

4. Meanwhile, cook the pasta according to package instructions.

5. Once the squash is cooked, add it to the cooked pasta and stir to combine.

6. Serve the pasta topped with grated Parmesan cheese. Enjoy!
