Butternut Squash Pasta

Butternut squash pasta is an easy, nutritious and delicious meal that is perfect for a weeknight dinner for the whole family. This dish is simple to make and can be prepared in no time at all.

Butternut squash is a versatile winter squash that is high in fiber, vitamins, and minerals. This squash has a mild, sweet flavor and pairs well with a variety of ingredients. When cooked, it takes on a creamy texture that makes it a great addition to any pasta dish.

To make butternut squash pasta, start by preheating your oven to 375 degrees. Cut the squash in half lengthwise and remove the seeds. Place the halves cut-side down on a baking sheet and roast for about 40 minutes, or until the squash is tender. Once the squash is cooked, let it cool and then scrape out the flesh.

Next, cook the pasta according to the package instructions. When the pasta is finished cooking, drain it and set aside.

In a large skillet or pot, heat some olive oil over medium heat. Add garlic and sauté until fragrant. Add the roasted butternut squash flesh and cook for a few minutes, stirring occasionally. Add some chicken broth, salt, and pepper and bring the mixture to a simmer. Cook for a few minutes until the broth has reduced and the mixture is creamy.

Finally, add the cooked pasta to the skillet and stir to combine. Cook for a few more minutes until the pasta is heated through. Serve the butternut squash pasta with extra salt, pepper, and Parmesan cheese, if desired.

Butternut squash pasta is an easy and delicious way to get a healthy meal on the table in no time. It’s packed with nutrition and can be prepared quickly for a busy weeknight. Enjoy!
