Vegan Tacos with Crispy Tofu is the perfect way to enjoy a delicious, plant-based meal. This vegan taco recipe is made with crispy tofu, fresh vegetables, and a flavorful garlic-lime sauce. The combination of flavors and textures make this taco recipe a winner!

To start, press and drain the tofu. Use paper towels to help absorb the excess moisture. Cut the tofu into cubes and season with salt and pepper. Heat a skillet over medium-high heat with a tablespoon of oil. Once the oil is hot, add the tofu cubes and cook until they are golden brown and crispy. Once cooked, set aside and let cool.

Next, prepare the vegetables. Slice a red bell pepper, a yellow bell pepper, an onion, and a jalapeño pepper. Heat a tablespoon of oil in a skillet over medium-high heat and add the vegetables. Cook for about 5 minutes, stirring occasionally. Once the vegetables are cooked, set aside and let cool.

To make the garlic-lime sauce, mix together the juice of 1 lime, 2 tablespoons of olive oil, 1 tablespoon of maple syrup, 2 cloves of minced garlic, 1 teaspoon of cumin, 1 teaspoon of chili powder, and 1/2 teaspoon of smoked paprika. Stir until the ingredients are combined.

Once everything is ready, assemble the tacos. Place a few pieces of the crispy tofu and some of the cooked vegetables onto a warm corn tortilla. Drizzle with the garlic-lime sauce, add some chopped cilantro, and top with a few slices of avocado. Serve with a side of refried beans, guacamole, or salsa.

Ingredients

  • 1 package of extra-firm tofu, drained and pressed
  • 2 tablespoons olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 cup water
  • 1/4 cup vegan mayo
  • 2 tablespoons fresh lime juice
  • 1/4 teaspoon cayenne pepper
  • 6-8 taco shells
  • 1/2 cup shredded vegan cheese
  • 1 cup cooked black beans
  • 1 cup finely diced tomatoes
  • 1/2 cup finely diced red onion
  • 1/2 cup sliced jalapenos
  • 1/2 cup chopped cilantro
  • 1/4 cup vegan sour cream

Instructions

1. Preheat oven to 375°F.

2. Cut the tofu into small cubes and place them in a large bowl.

3. In a small bowl, mix together olive oil, chili powder, garlic powder, cumin, paprika, sea salt, and black pepper.

4. Pour the mixture over the tofu and toss to coat.

5. Spread the tofu onto a greased baking sheet and bake for 25-30 minutes or until tofu is golden and crispy.

6. In a small bowl, mix together vegan mayo, lime juice, and cayenne pepper.

7. Heat taco shells according to package instructions.

8. Place a layer of vegan cheese in each taco shell.

9. Add cooked black beans, diced tomatoes, red onion, jalapenos, cilantro, and crispy tofu.

10. Drizzle with vegan mayo mixture and top with vegan sour cream.

11. Serve immediately. Enjoy!
